I’ve had a worrisome week.  Will we have enough teachers?  How did the legislature do?  Will lower tax rates matter?  Are our voting laws out of line?  What’s the status of parental choice?  Will the governor’s vetoes bring the legislature back to town?

Thanks to my colleagues for staying on top of these important issues and setting the record straight. Now I can relax.

So can you.  And to start off your relaxing weekend, here are two easy breezy recipes for a Friday afternoon…

Easy breezy chicken for a summer evening:

1 whole chicken, cut up

1 envelope of Lipton Onion Soup

1 can apricot halves

Place chicken pieces in glass baking dish. Sprinkle soup mix over chicken. Place apricot half on each and pour juice over chicken. Bake at 350 degrees for 50 minutes.

Easy breezy fruity yogurt pie for a summer dessert:

2  8oz. yogurts, any flavor (total of 16 ozs.)

8 oz. container of Coop Whip

½ mashed fruit, your choice

Mix well and pour into graham cracker pie crust.  Freeze overnight.
