On this Friday afternoon before Thanksgiving, it seems fitting to start being thankful.  Actually I’m thankful all year, I just talk about it more this time of year. So here goes….

I am thankful for free-market conservative reforms that were enacted during the 2013 legislative session, for ideas passed along from Ronald Reagan on taxes, Barry Goldwater on regulations and Milton Friedman on education, and for the real story on state spending, (no, it’s not $20.1 Billion, more like $50.8 Billion). Every NC taxpayer should be thankful for tax reform.  I’m thankful that Republicans are not decimating public education (we actually have added 1,431 more teachers since 2011!) I am thankful for the truth about some pretty big turkeys. I’m thankful for the glamour of our Shaftsbury luncheons.

I’m thankful for my friends at WTSB and my Friday afternoon interviews with Carl Lamm  – our great conversations on public policy, current events and recipes.

In that light, I’m also thankful for cranberries.  Consider this for your Thanksgiving dinner –This cranberry apple casserole is the perfect dish – you can make it ahead of time, great as a turkey dinner fixin’ or as a dessert; good warm with ice cream or cold the next morning with your coffee.  Heck, better make two!

Cranberry/Apple Casserole

3 Cups chopped peeled apples

2 Cups cranberries

1 Cup sugar

Mix this together in a 2 quart casserole dish.

1 ½ Cups oatmeal

½ Cups brown sugar

½ Cup flour

½ Cup melted butter

¾ Cup chopped nuts, your choice

Mix this together and put it atop the fruit.

Bake at 300 degrees for about 45 minutes til hot and bubbly.
